Have you paid attention to all the different flour options at the grocery store. You can find almond, coconut, potato, chickpea..I saw a hazelnut flour the other day also. Yes, I want to eat healthier, but buying a combination of these to make the best tasting pancake, would also make this the most expensive pancake, as these flours are very costly.
Instead of trying several expensive flours, I settle for flaxseed. It has a lot of fiber, and it good in general. This recipe is not perfect if you sit there and try to compare it to regular pancakes, but otherwise, it is pretty good. The pancakes have a nice fluffy texture and the sweetness can be adjusted according to your preference and overall sugar intake goals.
Even after I settled for flaxseed, I had to select one of the many brands available. I selected Bob’s Red Mill Organic Golden Flaxseed Meal. I chose organic because I thought I was paying a high price for the product already, why not pay a bit more for organic. I like the sturdy packaging that can be closed securely with a bag clip, and the product itself looked fresh. The link is a product variation available on Amazon, but it is probably available at most grocery stores.
I chose to add a couple of chopped strawberries to the batter, and served with more strawberries and a little syrup. I have prepared them with blueberries and with a combination of blueberries and strawberries. You can substitute any desired fruit but consider making adjustments if the fruit has too much juice.
These pancakes are good substitution for me. My husband and my puppy liked them too!
Here is the recipe for 1 person 2-3 pancakes.
Flaxseed Meal Pancakes Recipe (Strawberry/Blueberry)
1/4 cup flaxseed meal
1/4 cup finely chopped strawberries or blueberries
1 large egg
1/2 tsp vanilla
1/4 tsp baking soda
1/8 tsp baking powder
1/2 tsp apple sider vinegar
1/4 tsp ground cinnamon
1/4 tsp nutmeg
pinch of salt
- In a small bowl lightly whisk egg
- Add all of the wet ingredients and mix well
- In a separate small bowl mix all of the dry ingredients well
- Slowly, and while mixing, add the wet ingredients to the dry ingredients
- Set a side for a few minutes while you heat the gridle or pan on medium heat
- Use a small ladle to pour mix into gridle into a smaller area than the actual size of pancake that you desire, as you will use a spoon to spread the batter a bit so that you can better monitor its cooking
- Cook 2 1/2 to 3 minutes on each side
- Repeat until you have poured all of the batter
- Serve with sliced strawberries or blueberries
- Add desired syrup

I found this recipe in 2010 and I have a printed copy. The site where I found this recipe no longer exists, but I was able to find it again on a standalone site. I pull this recipe out during holidays for special occasions.
