Have you come across a recipe that you decide will be the one you will use forever for that particular dish?
It happened to me over five years ago. I was looking for a recipe for a seafood soup and I found one that I will not ever try to replace.
The soup is so, so delicious. It has great flavors and just the right balance of ingredients. At the same time, it is versatile that some of the ingredients can be adjusted to preference, and the results will still yield a great seafood soup.
The recipe calls for quite a few ingredients, but the preparation instructions are well written so it is not too complicated. I have prepared this recipe many times so for me it is quite easy to prepare.
My favorite ingredient is the poblano pepper and it is one of the ingredients that I think elevates the flavors of the soup.
The Best Seafood Recipe
Here are few changes that I made due to preference:
I do not like aniseed but wanted to have a little bit of the flavor profile, so I substituted aniseed for fennel. I used 1/2 tsp and not the 1 1/2 tsps the recipe called for.
The recipe also called for cumin seed to be toasted before grinding, but I used ground cumin because I did not have cumin seeds.
I used fresh tilapia and shrimp, and pre-cooked mussels.
And lastly, the recipe calls for 2 jalapenos, and I simply added a bit of homemade salsa instead.
